San Jose casino restaurant The Province revives with upscale fusion menu


Restaurateur Paul Reddick is betting that Silicon Valley residents and businesses will love a new dining option that features an “upscale, yet affordable” menu and atmosphere.

So he just relaunched Province, the spacious restaurant at the Bay 101 casino in San Jose, with a new menu, chef and management team.

“Our goal is to have our food and service connected with the environment here,” said Reddick, who took over the restaurant before the pandemic and set out to retool the concept this year.

This environment is a stylish and flashy 3,500 square foot restaurant space with high ceilings, geometric design elements, leather booths and sofas, chandeliers, a spectacular bar with liquor shelves suspended from the ceiling by d ‘huge rope cables and translucent red doors that slide down to create private event spaces.

Outside, there’s a redesigned patio outfitted with three fireplaces, heat lamps, and comfy seating for 80s to 90s.

For this company, Reddick – known as the pit master turned restaurateur with Smoking Pig restaurants in San Jose, Fremont and Las Vegas – is joined by general manager Relinda Mattson, who comes to The Province from the prestigious Bacchus Management Group (Selby’s , Village Pub) and chefs who have cooked in upscale and corporate kitchens across the country.

On the reimagined fusion menu, entrees include Ahi Tuna Tostada with Mango Salsa, Coconut Shrimp Satay with Sriracha Sauce, Lemon Crab Artichoke Dip and Calamari Fritto Misto.

From the wok comes the prawn and Lop Cheung sausage and other stir-fries, and from the grill comes a Prime Grind Steak burger.

On the range of starters, a modernized Veal Oscar called Osamu Beef Filet is topped with Thai butter and served with the classic sides, crab and asparagus. A roasted chicken breast with herbs is served with a soju plum sauce or another sauce of your choice. Diners are encouraged to make the dish their own by mixing and matching side dishes and sauces.

For dessert, the kitchen prepares white chocolate coconut cream pie, ricotta cheesecake with blueberry reduction, and shiny chocolate cake.

The full bar offers California wines and local craft beers and more on tap.

“Part of our mission is to make sure (101 bay) customers are taken care of, said Reddick. “But beyond that, we want this restaurant to be a success as a stand-alone,” just as diners in Las Vegas “can go to Bellagio to eat and not to gamble”.

Why not have barbecue on the menu?

“The barbecue and the cards don’t go hand in hand, so to speak,” said Reddick, raising his hands jokingly as if his fingers were sticky from eating ribs.

Also, he said, its original Smoking Pig location is “just a mile and a half down the road.”
