What is the Pollo project?

What sets Project Pollo apart from its peers like McDonald’s, Wendy’s, or Chick-fil-A isn’t just its plant-based food menu that features delicious dishes like burritos, burgers, fries, wraps, etc., made with a vegan alternative to chicken. (chikn) but also the focus on people rather than profits! The food chain that started as a food truck in 2020 during the pandemic, quickly grew into a chain of 12 restaurants scattered across Texas in less than two years since its launch!

Given the brand’s focus on people rather than profits, Project Pollo offers a variety of programs that benefit its employees and the communities around them. Offering fair compensation to all of its employees along with other benefits such as health and dental insurance, as well as paid time off, the brand also offers a “pay what you can” menu. In an interview with The Dallas Morning News, Lucas Bradbury explained, “There’s part of our menu with a chicken sandwich, which we’ll call the Free Bird, and chicken popcorn and [vegan] macaroni and cheese. Every location has it. It just means pay what you can: if you’ve got 25 cents on you, cool, we’ve got your food. If you don’t have any cash on you, cool, we have your food. If you’ve got $5 on you, cool, we’ve got your food. It’s about community access to plant-based foods. … If I could do one thing for the rest of my life – if the Pollo Project becomes this huge success story – I promise you I’d drive around in a food truck and distribute free food to underserved communities. That’s what excites me the most. I really don’t care if this company ever makes a substantial amount of money.”

“The Pollo Project was built around a simple mission, to challenge the chicken by putting people above profit and delivering Pollo with purpose. We sought to redefine consumer behavior by delivering convenience, quality and affordability. Inevitably, the future of mass consumption is plant-based; we want to lead that front, put one on every corner, and have affordable options in every community around us. You are our priority and our commitment. is to you, the community that brought us here!” writes Bradbury on the brand’s website.

Who is the founder of the Pollo Project?

As mentioned above, Lucas Bradbury is the founder of Project Pollo. After working for several years in the food industry in various capacities, Bradbury started Project Pollo during the pandemic in September 2020. It all started when Bradbury was trying to get his family to eat healthier by switching to a vegan diet. Meanwhile, his friend asked him if he would be interested in opening a food truck at his bar, so he could reopen the bar during the pandemic. Bradbury agreed and quickly found his chicken sandwiches and wraps to be a huge hit with customers. Encouraged by the success of the food truck, he slowly expanded his activities by opening 12 outlets in 12 months!

Bradbury shared, “The Pollo Project is not designed to be a vegan brand trying to persuade people to be vegan or vegetarian. The aim of the Pollo project is to create a foundation for the future of a sustainable QSR. [quick service restaurant] concept. …It uses a lot less land, uses a lot less water, uses a lot less greenhouse gases and does something more sustainable for the planet [than other restaurants]. … So we focus on the future of sustainability in mass consumption. Now we’re putting it on the menu that it’s “plant powered.” But again, I don’t want to be vegan to the face. Our protein happens to be made from real plants. That’s it.”

Bradbury explained: “Our goal is to challenge the system. You can have a great quality product at an affordable price in a convenient way, it’s good for the planet and good for you. And it just so happens that it is made from plants.”

Who will steal the deal?
