The old grill is being renovated for the new casual restaurant, which is slated to open in a few weeks. “We’re changing to make it a modern Japanese house,” said On Augsondthung, who co-owns the new restaurant with her husband and chef, John Augsondthung. He wants to open it quickly while the weather is cooler. “People need hot soup,” he said.

Yoko-San’s menu will focus on varieties of ramen, a popular Japanese noodle soup, but will also include Japanese curry, pot sticks and more. “We probably start with a smaller menu at the start and expand it later,” Ms. Augsondthung said.

Mr Augsondthung attended a ramen cooking school in Thailand, where the couple are from, and then trained with a master ramen cook in California, Ms Augsondthung said. “So he learned a lot of techniques and secret ingredients to make it very authentic,” she said.
