Midland Couple Launches Chapin-Based Grilled Cheese Gourmet Food Truck | Business

Austin and Callie Benz took a popular, simplistic comfort food and developed it to develop a complete food truck concept.

Cheese and Thank You officially launched on Saturday and has welcomed customers who have decided to try sandwiches a little more daring than your regular grilled cheese.

The company offers gourmet grilled cheese sandwiches like Bulgogi fondant, with pickled rib eye shavings, grilled onions, basil, smoked provolone and a three-cheese blend. The Mac’s Return Sandwich is made with baked mac and cheese, bacon, arugula, three-cheese blend, and pepper ranch. Another original creation is the “crab rangoon”, a sandwich with artificial crabmeat, cream cheese, garlic tempura flakes and a mild Thai chili sauce accompanied by the house cheese blend.

Austin Benz said their food truck inspiration came from his background in the kitchen and their love for trying new things. The logo, a dog balancing on a large slice of cheese on its head, depicts their very own Blue Heeler, Joanna.

“We’re foodies and we love dogs, so it worked hand in hand,” he said.

Although the food truck has only been open for less than a week, Benz said customer response has been mostly positive. The couple made their Irmo truck debut at One More Grill & Pub, and Benz said the crowd of friends and customers were very present.

“It’s great. A lot of people have been willing to give our ideas a chance. They’ve been open-minded about some of our craziest sandwiches,” he said.

Since then, he said they have continued to gain support and have started booking appearances in neighborhoods across the region.

“It was upsetting, we are really grateful to everyone – to all of our friends who have been so supportive of us, our Irmo family, and especially our friends from Daily Grind in Chapin for lending us their building,” he said. -he declares. The cafe serves as the food truck’s police station.
