Asian Culinary Exchange Comes Home For Its Fourth Installment


The country’s biggest food conference is back. And it comes in a new format.

Founded by Angelo Comsti in 2018, the Asian Culinary Exchange (ACE) began as a two-day event with live panel discussions on the first and a series of chef collaborations on the second. It was built not only to foster good relationships and exchange ideas with other chefs in the Asian region, but also to introduce them to our culture. Between the milestones there are market tours, chef meetings and several meals that aim to introduce guest chefs to local specialties, hoping that they are inspired by our food and culinary skills.

In ACE’s first two years, renowned chefs such as Tonn Tassanakajohn (Thailand), Vicky Cheng and Peggy Chan (HK) and Kirk Westaway, Sun Kim and Rishi Naleendra (Singapore) graced the case. Last year, due to the pandemic, it took to a televised format with star chefs such as Julien Royer from Odette and Tristin Farmer of Zen (both from Singapore) joining the conversation.

In 2021, with strict travel restrictions still in place, ACE is going digital and taking a different direction. Entitled Homecoming, it will focus more on different aspects of Filipino cuisine, unlike in previous years when the conference revolved around the Asian F&B industry.

“Whereas before we discuss what is happening in the food scene of our neighboring countries as well as ours, this year we are only targeting ourselves, from the perspective of the past, present and future. », Explains the culinary writer and bestseller. cookbook author Angelo Comsti.

We’ll be paying a long-awaited tribute to the unsung heroes of Filipino cuisine, namely Doreen Fernandez, Maria Orosa and Nora Daza, all of whom have laid a stable foundation for Filipino cuisine.

We will also engage with our fellow Filipinos abroad, especially from the United States, Europe and Australia, and ask them about the challenges of promoting our food abroad. Then we brought together young emerging talents and talked to them about the importance of modernizing our dishes. Finally, we turn to our beloved celebrity chefs to find out what their dreams are for Filipino cuisine.
